I use this website every week when planning meals, so I organized it by category. It's easier to pick one recipe from each category than to pick 8 recipes from the whole list.

Chicken and Skirt Steak Fajitas I double the onions, still use 1 red bell pepper, and 2 poblano peppers instead of green bell peppers. I also broil the meat on a wire rack on the baking sheet. Pat the meat very dry!

Chicken Tinga We don't use chicken fat like he suggests, there is never enough chicken fat. Also Using all the peppers in the can makes it very spicy.

Green Chicken Enchiladas We use El Pato red sauce, and usually poach 3 chicken breasts instead of doing a rotisserie chicken.

Peanut Chicken Curry I like it less thick, using 4.5 cups of chicken broth, and always end up needing to simmer the vegetables for an hour so I just add the vegetables at the same time as the chicken.

Chicken Drumsticks In the oven I cook this on 425 the whole time, for just 40 minutes and rotate it once about halfway through. In the air fryer its 18 min at 400.

Toss 6 in olive oil and then coat them 2 tablespoons of flour, 1 tablespoon of baking powder, and 1 tablespoon of Tony Chachere's or Costco Sweet Mesquite seasoning. Air fry 18 min at 400 degrees.

Honey Sriracha Chicken Wings I stopped making this with the glaze because my kids can't handle the heat. In the air fryer its 16 min at 400.
