Pickled Onions or Peppers
We use standard 16oz mason jars, one for the red onions and one for the peppers.
Ingredients
- 1/2 red onion or 4 jalapenos or whatever you want to pickle
- white vinegar
- 1/4 tsp salt
- 1/2 tsp sugar
- a couple peppercorns (optional)
- a couple allspice berries (optional)
- a couple of coriander berries
- a few mustard seeds
Directions
- Slice the red onion pole to pole, or the jalapenos into coins
- Put the vegetable in a jar and fill halfway with vinegar. More liquid will come from the vegetable later. Add salt, sugar, and optional seasonings.
- Shake the jar a little
- Wait about 3 days. Its probably tasty after 1.5 days but it gets better!
