Pickled Onions or Peppers

We use standard 16oz mason jars, one for the red onions and one for the peppers.

  1. Slice the red onion pole to pole, or the jalapenos into coins
  2. Put the vegetable in a jar and fill halfway with vinegar. More liquid will come from the vegetable later. Add salt, sugar, and optional seasonings.
  3. Shake the jar a little
  4. Wait about 3 days. Its probably tasty after 1.5 days but it gets better!
